Smoked Porter Poached Pears
Ingredients:
8 pears
½ cup lemon juice
24 oz. Alaskan Smoked Porter
¼ cup lemon juice
1 cup sugar
cornstarch
Instructions:
Peel pears. Core them beginning from the bottom to within ½ inch to 1 inch from the stem. Leave the stems intact. Dip in lemon juice to prevent discoloring.In a heavy saucepan, combine Smoked Porter, ¼ cup lemon juice and the sugar. Stir until sugar is dissolved. Add pears to the pan and bring to a simmer over low heat, turning pears every few minutes. When the poaching liquid starts to simmer, remove from the heat and allow to cool to room temperature with the pears still in the liquid. Repeat several times, if necessary, until the pears are soft but not falling apart.When finished poaching, refrigerate pears in the poaching liquid until cool. To make a sauce, add 1 Tablespoon of cornstarch for every cup of poaching liquid. In a separate small bowl, combine the cornstarch with some of the poaching liquid, mix well and then stir back into the saucepan and continue cooking, stirring constantly, until thickened. Serve at once over poached pears.
