Shredded Sirloin Smoked Alaskan Fajitas
Ingredients:
1 Beef Round Sirloin Tip Roast
3 – 4 cloves garlic, slivered
Marinade:
1 16 oz. bottle Alaskan Smoked Porter
2 cups your favorite sweet/smoky barbecue sauce
1 – 3 cloves whole garlic, crushed.
Needed to assemble:
Grilled or sautéed red peppers
Grilled or sautéed red onions
Shredded lettuce
Grated cheese of your choice
Sour cream
Guacamole
Instructions:
Day before:Place roast in large glass baking dish. Insert slivered garlic into meat by making incisions with a sharp knife. Make marinade and pour over meat. Cover with plastic wrap and marinate overnight, turning once.To cook, place in a covered roasting pan on foil. Add reserved marinade. Cook covered for 12 hours, basting with the remaining BBQ sauce and Alaskan Smoked Porter mixed together. The roast is done when it can be easily shredded with a fork.Serve in flour tortillas, topped with sautéed or grilled red peppers and red onions and garnished with shredded lettuce, grated cheese, sour cream and guacamole.
