Alaskan Crab Lasagna
Ingredients:
2 lbs. wild Alaskan Dungeness crab meat (approximately 3 crabs), cooked & flaked
1 bottle Alaskan Amber (or substitute Alaskan Pale)
1 box lasagna noodles, cooked
Sauce:
1 quart ½ & ½
4 Tbs. Butter
4 Tbs. Flour
1 small onion peeled
4 whole cloves
1 tsp. Pepper
1/8 tsp. Nutmeg
1 head broccoli, trimmed into florets, steamed, about 1 ¼ lb. fresh broccoli
1 large red pepper, roasted
1 cup pine nuts, toasted
1 lb. Mozzarella cheese, thinly sliced
½ lb. Romano cheese, grated
½ lb. Parmesan cheese, grated
Instructions:
Preheat oven to 350 F.1. In a large saucepot over medium heat, simmer the crabmeat in the Alaskan Amber for 10 minutes. Drain, and reserve the liquid.2. Prepare the sauce: combine the cream and milk in a large pot over medium heat or in a glass bowl in the microwave and bring just to the boil. Remove from the heat and set aside.3. In the meantime, in a large pot, over medium high heat, melt the butter. When it begins to foam, whisk in the flour and lower the heat. Cook gently while stirring for 3 – 5 minutes.4. Whisk the warmed milk mixture into the butter and flour mix. Stir in ¼ cup of the reserved crab liquid. Stud the onion with the cloves, and add to the sauce. Raise the heat to high, bring the sauce just to the boil, and reduce the heat. Cook gently, stirring occasionally until thickened, 5-10 minutes. Remove from the heat and season with the pepper and nutmeg. Set the sauce aside.5. Prepare the remaining ingredients: Cook the lasagna noodles just until done, drain, and rinse in cold water. Drain and set aside.6. Steam the broccoli briefly and set aside.7. Roast the pepper by placing it directly on a burner on high heat. Turn it so that each side becomes black. Remove from the heat, allow to cool slightly, then rub off the blackened skin. Cut the pepper in half, remove the seeds and ribs, and slice into thin strips then dice. Set aside.8. Place pine nuts on a cookie sheet and cook in the oven for 3 – 5 minutes, or until lightly browned. Remove from the oven and set aside in a small bowl.9. Slice and grate the cheeses.Assemble the lasagna:10. Remove the onion and cloves from the sauce.11. Line up all the ingredients in order: Noodles, crab, broccoli, peppers, pine nuts, cheeses, and sauce.12. Spread ¼ cup sauce in the bottom of a 9-inch by 13-inch lasagna pan. Layer with noodles, then top evenly with 1/3 of each of the remaining ingredients in the order given. Repeat the layers two more times.13. Bake at 350 for 45 – 60 minutes, until golden brown and bubbly.
